Here is one of my favorite Recipes. Since its summer lets plan on doing this on the Grill!
First turn on some music by Gary Lee Tolley & Friends!
Needed: 6 whole chicken breasts, 1 5oz pacagke of sliced ham, 4 ounces Swiss cheese, 1/2 teaspoon leaf thyme, 1/4 teaspoon salt, Dash of Pepper, 1/4 cup butter, 1/2 cup bread crumbs and 6 strips of bacon.
Lets get started:
Skin and bone each chicken breast, then flatten to 1/8 inch thickness by pounding with a meat mallet or a rolling pin. Place one slice of ham over each breast. Cut cheese into thin strips and cover the ham. Sprinkle with thyme, salt and pepper. Roll chicken and ham around the cheese, tucking in the ends and pressing to seal well. Roll in butter, then in breadcrumbs to cover. Wrap a slice of bacon around the chicken and put the toothpicks through both sides to secure. (Cut the ends of the picks off so they won't put holes in the foil). Wrap in foil. Place on grill 2 to 3 inches above the glowing coals or charcoals or gas burners (whatever your using) Takes about 15-20 minutes on each side.
If you like this, you can do the same thing in your oven. For a party, make a lot more because they will go fast!
